We can always count on Katie Lee Biegel for super easy dinner recipes to spruce up weeknights. From 10-minute scallops to comforting roast chicken, The Kitchen co-host knows how to make an approachable, mouthwatering main.

And in a recent Instagram reel, the celebrity chef shared her current favorite go-to dinner that uses a protein she always keeps in her freezer. You only need one sheet pan to make it, and it’s loaded with protein and fiber to promise a fulfilling meal. It’s Sheet Pan Shrimp with Broccoli, and here’s why Biegel (and we) love it.

For this dinner, Biegel uses shrimp that she stores in her freezer, because the small-but-mighty protein is “so quick to thaw.”

“I can prep all the veggies and sauce while it thaws and the oven preheats,” she explains in her video caption.

Biegel coats her thawed shrimp, broccoli florets and diced onions in the same sauce. The sauce is a mix of hoisin sauce, soy sauce, honey, rice wine vinegar, Dijon mustard, ginger, sesame oil, vegetable oil, garlic and chili flakes. With the ingredients served on a bed of white rice, the savory, sweet and spicy flavors in this sauce really shine.

To keep all of her ingredients tender, Biegel cooks her dressed broccoli and onions on a sheet pan at 400 degrees F for 20 minutes before adding her shrimp to the pan. She then adds the shrimp and cooks everything together for an additional 15 minutes—no extra pots or pans necessary!

Shrimp has about 20 grams of protein per 3-ounce serving, making this dish a high-protein dinner that will surely be included in your weekly rotation. And broccoli and onions are packed with fiber, so prepare for a satisfying meal.

We love including shrimp in veggie-packed sheet pan dinners because they’re nutritious, flavor absorbent and easy to fit on the pan. We love recipes like our Sheet-Pan Shrimp & Asparagus and Sheet-Pan Shrimp, Pineapple & Peppers with Rice, both of which are highly rated and ready in 25 minutes or less.
